- 1.5 cups – All-purpose flour
- 20 – Dates (seedless)
- 3/4 cup – Sugar
- 3/4 cup – Milk
- 1/2 cup – Pineapple chunks (chopped finely)
- 1/2 cup – Oil
- 1 tsp – Baking Soda
- 1 tbsp – White vinegar or apple cider vinegar
Heat the milk and soak the dates for a few minutes. Add the sugar and grind them as smooth paste and keep aside.
Mix the pineapple chunks with a teaspoon of flour and keep aside.
Pre-heat the oven to 350 degree F.
Meanwhile, sieve the flour and baking soda and keep aside.
Now, take the dates puree, oil and beat together for a few minutes.
Add the white vinegar. Give a stir.
Add the dry ingredients gradually little by little.
Mix slowly finally and add the pineapple chunks.
Give a quick stir and pour the cake batter to the greased mould.
Bake for 20-25 minutes or until a skewer inserted comes out clean.
Enjoy with a cup of tea.
