Chocolate and Vanilla Cream Slices with Orange Crumbles

  • 150 g flour, plus extra for dusting
  • 50 g cornstarch
  • 2 tsp baking powder
  • 30 g cocoa powder
  • 100 g butter, plus extra for greasing
  • 100 g sugar
  • 1 tbsp vanilla sugar
  • 1 egg
  • Grated zest of 1 lemon
  • 150 ml milk
  • 40 g vanilla custard powder
  • 500 ml milk
  • 100 g sugar
  • 150 g plain flour
  • 100 g sugar
  • 1 tbsp vanilla sugar
  • 100 g soft butter
  • Grated zest of 1 orange
  • 20 ml Cointreau liqueur
  • Confectioner’s sugar, for dusting


  • Prepare all ingredients for use. Preheat the oven to 170°C.
  • For the pastry, mix the flour with baking powder and cocoa powder.
  • Whisk the butter, sugar and vanilla sugar in a food processor.
  • Add the egg and grated lemon zest and whisk until creamy. Add the flour mixture and the milk and stir to obtain a smooth pastry.
  • Grease a springform pan and dust with flour.
  • Fill the pastry into the cake tin, smooth out and bake for 30 minutes in the preheated oven.
  • Leave to cool for a moment. Prepare a cream from the vanilla custard according to the instructions on the packaging.
  • Take a spoon and make a few holes in the chocolate cake.
  • Brush with the vanilla cream.
  • To make the crumbles, knead the flour, sugar, vanilla sugar, butter, orange zest and Cointreau with your hands.
  • Sprinkle the crumbles and the crumbled pieces of chocolate cake from the holes over the vanilla-creamed cake. Bake in the preheated oven for another 30 minutes. Remove from the oven and leave to cool. Then remove from the cake tin and dust with confectioner’s sugar before serving.



    Makes 1 springform cake pan (28 cm Ø.) Baking time: 60 min.
